Recipe SuggestionChicken & chorizo paellaYou Will Need...1 jar Spanish paste1tbsp vegetable oil500g chicken thighs225g chorizo, peeled & chopped100ml white wine250g paella rice100g frozen peas100g cooked king prawns (optional)1/2 pack fresh parsley (optional garnish)Lemon wedges (optional garnish)Method1. Heat the oil in a large heavy based pan, fry the chicken thighs skin side down for 10 mins until skin is brown and crispy. Turn over and cook for a further 5 mins.2. Set aside the chicken and add the chorizo to the pan, fry for 2-3 mins.3. Reduce the heat, add the paste and fry for a further 2-3 mins.4. Add the rice and fry for 2-3 mins, then add wine and cook for 1 min to evaporate the alcohol.5. Add 575ml of water and stir well to mix everything together. Bring to the boil, add chicken back into the pan, reduce to a simmer and cook for 20 mins (without stirring so as to form a crispy crust).6. Add frozen peas (and optional prawns), cover with a lid or foil and cook for 2 mins.7. Ensure thoroughly cooked and serve with a garnish of lemon and chopped parsley.
