Instructions
Boil - From Ambient. 40 MinsNo need to soak. Rinse thoroughly before cooking. Place 100g of lentils into a large saucepan with 500ml of water. Place the pan on the medium hob over a high heat. Bring to the boil for 10 mins. Reduce the heat to low and simmer for 30 mins, until the lentils have softened but are slightly firm to the bite. Drain thoroughly, rinse and use as required. Do not reheat.

Pre-heat the oven to 200°C / fan 180°C / Gas mark 6.2. Heat the olive oil in a large saucepan and gently fry the onion and garlic for 2 mins. Stir in sweetcorn, tomato puree, red lentils, mixed herbs, tinned tomatoes and the vegetable stock, bring to boil. Add salt and simmer for 20 mins until most liquid is absorbed and lentils have become tender.3. Pour the lentil mixture into a lightly greased ovenproof dish.4. Combine the breadcrumbs and cheese and sprinkle on top.5. Bake in the preheated oven for 15 mins until the cheese is golden and bubbling.Serve: hot or cold.Makes a great meal on its own or perfect as an accompaniment to sausage or lamb.
